“It’s like getting an invitation from the president or the Pope: you just don’t say, ‘no’ .”
That’s how David Chang, chef and founder of the Momofuku restaurant empire, including Momofuku Seiobo in Sydney, describes the summons to Monaco of some 240 chefs by one of the world’s most celebrated culinary creators, Alain Ducasse.
Ducasse – the first chef to be awarded three Michelin stars in three cities, Paris, New York and Monaco at the same time – had an important mission for his guests: to celebrate the 25th anniversary of his restaurant Le Louis XV at the Hotel de Paris in Monte Carlo.
They came from around the globe, chefs in caps, chefs in jeans, chefs sporting silver Nikes, or the rock star look: quaffed or unkempt hair and designer sunglasses. But all wore “chef’s whites”, the traditional double-breasted jacket of the trade. Read the full article.
