Moringa Leaves Recipes

As more and more people are turning towards a healthier lifestyle, moringa leaves used in cooking is becoming increasingly popular. To some, it is known as "tree of life", thanks to its numerous health benefits, such as reducing inflammation, boosting immunity, and lowering blood sugar. Moringa leaf has been used in Indian dry curry recipes for thousands of years for good reason. Today we’re going to share three delicious recipes containing moringa, and how to prepare them quickly and easily. All recipes are for single service (serves 2) but if you’d like to make it for more people you can double or triple the ingredient amounts easily.

Drumstick Leaves Curry

  • 2/ 3 cups - Moringa leaves/Drumstick tree leaves (chopped)
  • 1/2 cup - yellow lentils
  • 1 large tomato (chopped)
  • 1 tsp each of ginger & garlic
  • 1/4 tsp each of  turmeric powder, garam masala
  • 1/2 tsp - mustard seeds
  • 1 cup - water
  • 1 tbsp - oil
  • Salt and Pepper, to taste
Cooking Method
  • Finely wash the leaves. Wash the lentils separately. Chop the leaves
  • Heat the oil in a pan.
  • Add the mustard seeds and stir-fry.
  • Add the chopped leaves along with salt.
  • Remove from heat after a few minutes.
  • Take another saucepan, add yellow lentils with 1/2 cup of water and turmeric powder.
  • Add all the masalas, salt, and tomato pieces.
  • Cover and cook in a pressure cooker (1 whistle), or leave in the pan for 10 minutes on a medium heat or until the lentils are soft.
  • Pour the lentils into the original mixture and stir them in a lower heat to mix up properly.
  • Switch off the flame when the lentils are dried up
  • Serve the Drumstick Leaf Curry with chapati or rice and dal.
Pro Tip: Try buying younger moringa leaves. These are easier to chew, digest and requires less water while cooking.

Moringa Leaves Stir-Fry

stir fry moringa leaves recipe This recipe is originally from Kerala, India and includes two organic superfoods, moringa and coconuts. Moringa Leaves Stir-Fry is best served with steamed rice and dal. As the leaves are bitter, adding plenty of grated coconuts can soften the bitterness. Ingredients
  • 2/ 3 cups - Moringa leaf
  • 1 cup- grated coconut
  • 1 tsp – oil
  • 1 tsp –dry chillies (crushed)
  • 1/2 tsp – mustard seeds
  • 1 piece- onion (small)
  • 5 cloves - Garlic
  • Salt to taste
Instructions
  • Wash and drain the moringa leaves, then chop them
  • Peel and chop the onion and slice the garlic
  • Heat the oil in a pan, add mustard seeds, onion, and garlic
  • Sauté the garlic and onion for a couple of minutes on medium flame until they becomes slightly golden.
  • Add the leaves and salt in a bowl and mix them properly.
  • Add the leaves to the oil pan and mix for 10-12 minutes till the water has been evaporated, and the colour of the leaves are deep green.
  • Add the grated coconut and stir them for 2-3 minutes at low flame.
  • Switch off the stove.
  • Serve the healthy and delicious stir-fry with some rice and curry.
Pro Tip: Don’t substitute with coconut paste. Fresh coconut grating gives a much nicer flavor.

Chilli Potato Curry with Moringa Leaves

moringa leaves recipe with potatoes and curry powder Many people like to cook moringa leaves like spinach, and cooking potatoes with moringa is also gaining popularity. If you like potatoes then this recipe is for you. Ingredients
  • 2/3 cups - Moringa leaves/ Drumstick leaves (chopped)
  • 2 diced Potatoes (medium)
  • 2 Green Chilies (chopped)
  • 1 tsp – Ginger & Garlic
  • 1 tsp - Red Chili powder
  • 1/2 tsp - Turmeric Powder
  • 4 tbsp Mustard Oil
  • Salt to taste
Instructions
  • Wash the moringa leaves and chop them.
  • Wash, peel, and chop the potatoes
  • Add oil in a medium heated pan and add onions, stir until they become grey.
  • Add garlic and ginger; after few seconds, add turmeric powder and stir them for 3-4 minutes.
  • Add chopped potatoes and salt. Give a nice stir to mix.
  • After 10-15 minutes, add the moringa leaves and red chilli powder; mix well.
  • Cook the mixture for 5 minutes in a lower heat
  • Switch off the flame and enjoy it with rice.
Pro Tip: Add in extra chillis/spices if you like things with a bit more zing and flavor. Here you have three of our favourite recipes made with moringa leaves.
